Hi Nicola,
I'm sorry but I'm missing what you are asking for.
Trying to have a recap:

1) you're missing the documentation about implementing your own NGSI10
client  using the provided NGSI10 Java library (/ExampleClient/lib/
NGSI910DatastructuresAndNGSI10Operations.jar)

2) the only documentation is available in
https://forge.fiware.org/plugins/mediawiki/wiki/fiware/index.php/Tools.NGSITestServer
specifically
in the section "Implementing your own NGSI10 client”

Anything else?

If the documentation is not enough to proceed, please send a description of
the problem you are having and I will forward it to the relevant person in
FIWARE.
